Has anyone made homemade sausage and can offer any advice?
I’m planning to make my first sausage at home. I have a grinder, and I’ve already ordered casings too, but I’m wondering about some kind of smoker. Is it worth investing in something better, or would something simple be enough to start with? And what’s the deal with wood for smoking in general?

At first I thought the simplest thing would be enough, but then I started reading and it was better to invest in something more well thought out. A lot depends on whether you just want to give it a try or whether you’re really going to get into it. It turned out that I got hooked, so I don’t regret the purchase. And they do a nice job explaining which wood to use and what it’s best suited for. There’s a lot of information on the site, so you can learn a bit before your first attempt. The wood really makes a difference in the flavor. You don’t have to go straight for the biggest smoker, but it’s worth thinking about how often you plan to use it.
