eBay.de INVOICES

If I’m selling products on ebay.de and issuing an invoice as a company without the involvement of eBay, do I have to write everything in German? For example, if the products have Polish names, but I list them on ebay.de in German, do I have to have everything on the invoices in German?

You don't have to, but if you're selling to German-speaking customers, then it would be appropriate to use that language for their sake. That's what I think, and that's how I try to act, of course as far as possible, because I don't know many languages, but here eBay comes to the rescue, automatically translating.
